Easter Saint-Honoré
For Easter, Maison Augustine revisits the iconic French Saint-Honoré into an elegant and indulgent centrepiece designed for sharing.
Built on a delicate, buttery puff pastry base, this creation combines a rich praline cream inspired by the Paris-Brest, layered with an assortment of handcrafted choux craquelin.
Chocolate choux are filled with a light milk and dark chocolate chantilly, while vanilla choux bring softness and balance with a pure vanilla chantilly. The composition is finished with mini choux, crunchy French praline (caramelised almonds and hazelnuts), and refined Tonka bean & dark chocolate namelaka truffles.
Each element is carefully assembled to create contrast in texture and depth in flavour: crisp, creamy, airy, and intensely comforting. A signature Easter creation, imagined and handcrafted by Charline.
