L'histoire de Maison Augustine

Bonjour, I’m Charline, the French pastry chef behind Maison Augustine.

My journey with food began in France, where I launched my first food truck in 2014, serving fresh homemade meals. That passion led me to open my own restaurant in 2017, where I deepened my love for refined, thoughtful cooking.

In 2018, my partner and I moved to Australia to start a new chapter. By 2020, I had created French Faves, a project that brought French cakes to life at local markets around Newcastle. In 2021, I opened a pâtisserie in Broadmeadow – a warm, vibrant space filled with buttery aromas and loyal customers. It was a beautiful chapter, but one I had to close due to health reasons.

Now, in 2025, I’ve chosen to return to my roots: baking from home, on a smaller scale but with even greater intention. Maison Augustine is the natural evolution of everything I’ve learned – a refined, elevated version of what I love most.

Here, I focus on creating petits fours: delicate, handcrafted French mignardises made in small batches. Every piece is designed to surprise and delight, elegant, and never overly sweet. My recipes celebrate the integrity of high-quality ingredients and the beauty of precision.

Each box from Maison Augustine is a curated tasting experience, whether you're hosting, gifting, or simply indulging in something beautiful just for yourself.

This is not a retail bakery. Orders are made in advance and picked up (or delivered) by appointment only. It allows me to keep every creation fresh, personal, and intentional.
