If you've ever attended a French dinner party, a wedding, or an elegant afternoon tea, chances are you've encountered a petit four, that jewel-like bite placed beside your coffee cup, almost too beautiful to eat.


But what exactly are petit fours? Where do they come from? And why are they having such a moment in Australia right now? As the maker behind Maison Augustine, Newcastle's French pâtisserie. I've answered this question more times than I can count. So let me tell you everything.

The meaning of "petit four"


The term petit four is French for "small oven." The name dates back to 18th-century France, when large wood-fired ovens took hours to heat up, and just as long to cool down. After the main baking was done and the oven temperature dropped, clever pâtissiers would use the residual heat of the "small oven" to bake delicate little sweets that required a gentler temperature.

These bite-sized creations became a staple of French pâtisserie, elegant, precise, and made with the same technical skill as a full-sized tart or entremet, just compressed into a single, perfect mouthful.


What makes a petit four different from other desserts?


This is what I love most about petit fours, they are not miniature cupcakes, not simple slices, and certainly not an afterthought. A true petit four is a complete multi-layered composition:

•      A base — often a sablée, a financier, or a delicate sponge

•      A filling — mousse, custard (creme patissiere), crémeux, ganache, or fruit gel

•      A coating or finish — mirror glaze, velvet spray, meringue, or fresh fruits

•      A final detail — gold leaf, a sugar flower, a precisely piped element

All of this, in a single bite that fits in the palm of your hand. The technical challenge — and the artistry — lies in getting every layer perfect at that tiny scale.

The different styles of petit fours


Petit fours glacés

The most recognisable style: small cakes finished with a smooth, glossy coating, usually a mirror glaze. These are the jewels of French pâtisserie. Each one is a tiny work of art. At Maison Augustine, our House Classics collection falls primarily into this category with the "petits fours frais".


Petit fours frais

Fresh petit fours, made with cream, mousse, or fruit, designed to be consumed the day they are made. The most technically demanding, and the most rewarding to eat.


Petit fours secs

"Dry" petit fours, the category that includes macarons, madeleines, financiers, tuiles, and delicate biscuits. These are less about the layering and more about the purity of a single perfect texture and flavour.


What is in the Maison Augustine House Classics collection?


At Maison Augustine, I create a curated selection of six signature petit fours: our House Classics. Each one is handcrafted to order in our North Lambton kitchen in Newcastle, using premium ingredients and traditional French techniques.

•      Lemon Meringue Tart (GF) : A Buckwheat sablée, almond & lemon sponge, lemon crémeux, crispy French meringue

•      Pistachio Choux Pastry : A light choux au craquelin and a creamy pistachio cremeux.

•      Exotic Charlotte (GF) : Mango & passion fruit mousse, coconut sponge and passion and mango gel.

•      Chocolate Fondant (GF) : Our famous dark chocolate intense cake, tonka bean namelaka cream

•      Cherry Raspberry Tart (GF) : sablée shell, almond & lime cream cake, raspberry mousse and a vibrant raspberry and cherry gel.

•      Hazelnut Financier : Made with brown butter, hazelnut whipped ganache, milk chocolate and hazelnut praline center.

The honest answer? Whenever you want to give someone a moment of real delight. But petit fours are especially perfect for:
